My Easy Chicken Cutlet Recipe!

One thing about me is I love an easy chicken cutlet recipe! I feel like I really have perfected mine and I’m so excite to share it with you! I feel like making cutlets can seems so daunting but once you get the hang of it, you really will never look back!

To make these cutlets, I like to use my electric fryer. I feel like it helps to make the process faster as you can fit more in it than just a pan on the stove. You can shop the exact electric fryer I have here! (this is an affiliate link so I make a small commission if you choose to purchase)

Ingredients

  • 2-3 boneless skinless chicken breast
  • at least 4 cups italian bread crumbs
  • 5 eggs cracked and scrambled
  • vegetable oil (enough to coat the bottom of you pan)

Directions

  1. Start by thinly slicing your chicken breast. I’ve found holding the chicken with one hand on top and using the knife sideways makes it easy and provides the thinest cutlets! Keep doing this until all your chicken breast are cut.
  2. Put your bread crumbs on either plate with sides or a low bowl then scramble the eggs and place them in another bowl with a little warm water.
  3. Warm you pan or electric fryer with enough oil to coat the bottom of it!
  4. Place your thinly sliced chicken in the egg and flip it over then place it in the bread crumbs and flip it over. Once that process is done you are ready to fry!
  5. Place breaded chicken in pan and let it sit until one side is golden brown then flip. Repeat the process until you have finished all the chicken!
  6. Let cooked cutlets sit on a paper towel lined plate to rest and enjoy!

The Summer of ’69 Book Review!

It might not be summer anymore but I’ll always love a good beach read! I recently discovered Elin Hilderbrand over the summer and I’ve been reading through her books. I’m excited to jump into my Summer of ’69 book review because this was my first read by her!

The iconic title of this book really just takes you back to a nostalgic era. I was craving a book about summer with depth and this was just that. The writing is so good as we follow along the summer of 1969 with a mother and her 3 very different daughters.

I loved that each of these women were in very different phases of their lives. Each had such a unique story to read about due to what they were going through. I’ve personally never been to Nantucket but Elin’s writing is so descriptive you really get a feel for what it’s like.

The story is set against the back drop of the war in Vietnam and the eldest son is sent off to war. It leaves the mother with anxiety and grief. As the story unfolds we begin to see the lengths that she goes to to protect him even though he’s so far away.

What I enjoyed most about this book was how it was surprisingly geared towards historical fiction. Elin was able to really touch on the social issues that were going on at the time but it wasn’t in a heavy way. The book was fascinating and I really found myself not being able to put it down.

Because this was the first book that really opened the door to this author for me. I have since added a few more to my to be read list! I hope you liked this review of the Summer of ’69! You can read more book reviews here!

How to Unwind for Bed!

As we sink back into the routine of normal life after summer, I always find myself looking for ways to unwind for bed! I’ve found a few of these tips and tricks I’ve listed below really get me to relax after a long day.

As many of you know I’m a naturally anxious person so shutting off my mind and being able to relax fully is something I struggle with! I love my hatch in the mornings but I also really love it all day! I turn on the red light as soon as I get home from work and it transforms my dark room into a cozy relaxing sanctuary. Red light is great as a restorative color for you and I’ve really found that this has helped me be able to relax at night and even throughout the day.

432 Frequency

My family actually makes fun of me because I almost always have some sort of frequency going. I swear it really calms you down not only at night but even throughout the day. I love this at night when I’m reading because it’s good background noise to have on but not distracting where you can’t read. This specific frequency is my all time favorite from YouTube!

Do these steamers work? I’m not sure, but are they great? Yes! I love lavender to relax and you’ll transform your shower into a spa with these steamers. You just throw one in right before you shower and it releases the lavender scent while you shower. This is like game changing before you get into bed because it just sets the tone and the mood for the night!

My Stanely has become my everyday house water bottle. It’s so big that I just fill it up like 3 times a day and I get all my water in. I don’t love to take it out because it’s kind of bulky due to the handle. But the handle really makes it so I wouldn’t just get rid of it if that makes sense!

This is my I’m going to be out all day water bottle. It’s easy to throw in a bag or just take on the go because it’s just a little sleeker than the Stanley. I’ve had my hydro flask for literally years and It’s still going strong. I do swap out my straws every few months just to keep everything extra clean.

My Simply modern water bottle is literally my errands and out and about water. I take this to work, a workout class, or when I’m in and out of stores shopping. It’s small so it’s easy to go out with and I love it. It’s also great when I’m washing my stanley to have this as my back up.

As you can see, I literally have a water for every part of my day. This list here is really my favorite water bottles ever and I truly use them all the time. It’s so important to get your water in and having these just makes it easier!

My Iced Matcha Recipe!

As I mentioned in my last week’s post, I have been loving this Iced Match Recipe! I look forward to it each and every morning! Matcha is so great for me because it doesn’t leave me anxious and jittery like coffee or chai does so this is a great alternative.

Before you start making matcha, you definitely want a few things on hand to make your life easier! I’ll link my go to matcha essentials below! They’re affiliate links so I do make a small commission if you purchase through me!

Ingredients

Chamberlain Coffee Matcha

Milk of choice (i love almond)

Ice

Sweetener of Choice (I go between sugar free vanilla or caramel)

Directions

  1. Start by boiling water. Grab a glass cup and pour 1 tsp matcha into it. Mix in the hot water and use your mini electric blender to blend. (can use a regular whisk too but electric one works better)
  2. Prep the cup you’re actually going to drink out of by adding ice, 1-2 pumps sweetener, and 1 cup of milk.
  3. Pour the hot matcha over the iced cup and stir with a straw to combine!
  4. Enjoy!!

I hope you loved my iced matcha recipe! It’s so simple and I highly recommend giving it a try if caffeine makes you too jittery! This gets my day going but in a more natural way that doesn’t give me crazy highs and lows!

Summer Day in My Life!!

I am obsessed with reading and watching day in the life content so I decided that I would share my own! My day varies a little here and there but for the most part it’s the same routine!

7:00am Wakeup & Walk

My favorite way to start my day is on a walk with Sky! Since she’s a Frenchie, she can’t really walk during the heat of the day so she and I get our steps in first thing. It’s also just a great way for us to start off the day with some movement!

7:30-8am Breakfast & Matcha

As soon as we’re back from our walk, I feed Sky because she’s always a hungry puppy! I make myself a matcha because I’ve found it makes me feel the best. The caffeine is there but it doesn’t leave me anxious and jittery like coffee or chai does!

8am-11:30am Work

This varies for me day to day depending on if I’m doing blog content like today or working for one of my Social media clients. This time blog is when I try to get a bunch of content created, uploaded and scheduled for whoever I’m working with!

11:30am-12pm Workout

I love me a good Melissa Wood Health pilates series and this is probably my favorite time of day! You can read more about the MWH method here! I like to try to do at least 15-20 minutes of movement everyday because some movement is better than none.

12pm Lunch

I am someone who always is starving by 12pm so I’ll make myself lunch asap! In the summer I love one of my toast recipes, like this pesto toast one! Something light and refreshing is always the best for me!

12:30-2:30pm Sun or Downtime

I leave this time up in the air in the summer. I love to lay out and read in the sun over the summer. It makes me feel so good so I love that I’m able to schedule time in. Sometimes I will just read inside or finish up work before I switch to studio mode!

2:30-7:00pm Dance Time!

I am in studio 3 days a week and Saturday Mornings even in the summer so I usually spend my late afternoons/evenings there!

7:00pm Dinner & wind Down

After I get home I’ll have dinner and probably watch an episode of Love Island! I’m obsessed with the show and it’s like a reward each night in the summer!!

My Go To Greek Salad Bowl

As the weather gets warmer, I become more obsessed with salads and bowls. I’ve been making this Greek salad bowl on repeat and I just had to share it with you. The flavors are so fresh and I feel like everyone has these ingredients on hand in the warmer months!

Often salads can be so daunting because they’re just not filling but I make sure to hit all my bases with a salad that is well balanced. From protein to fiber and carbs, this salad will have you wanting it for dinner all week long!

Ingredients:

pickled red onions

canned chickpeas drained & rinsed

diced cucumber

diced tomatoes

dill

lemon

tzaziki

pita

cooked farro or couscous

greens of choice (I like a 50/50 blend)

Directions:

  1. Add diced cucumbers, tomatoes, chopped dill, and the juice of half a lemon to a bowl and let set for about 30 minutes.
  2. Warm your pita by preheating oven to 350 and baking until brown on each side but not too crisp.
  3. Assemble your salad with greens, cooked couscous, tzatziki for the dressing, cucumber tomato mix, chick peas, and picked red onions!
  4. Enjoy!

Salads like this really keep you full because they have the greens but they have the the grains that do the heavy lifting. I used to avoid salads because I knew I’d be so hungry after eating one but looking at one like this has changed the game for me.

My Chicken Roaster Recipe!

This is definitely a newer recipe for me! I love this chicken roaster recipe because it’s not only good the day of but I love the leftovers. Chicken is just about the only meat I’ll eat and making a roaster like this ensures I’ll have leftovers to use in so many ways!

I like to think of this recipe as my own at home rotisserie chicken. It’s essentially the same thing but I can season it how I want and it gets so fresh and delicious! You can serve with potatoes and gravy or really however you want to! It’s so easy it’s become a staple in my meal rotation!

Ingredients

Whole Chicken Roaster

1 tsp thyme

4 tbsp melted butter

2 tbsp minced garlic

1 tsp garlic powder

1 tsp rosemary

Directions

  1. Preheat your oven to 425 and decide what pan you’re going to use. Sometimes I use my dutch oven and others I’ll use a throw away aluminum foil.
  2. Prep your chicken by patting it dry from the extra liquids.
  3. Melt butter and then mix in minced garlic, garlic powder, thyme, and rosemary. Pour mixture over chicken in pan and make sure it coats completely. (sometimes I add more, sometimes I need less)
  4. Cooking time will depend on weight of your roaster.. typically it’s 2-3 hours for a young chicken and sometimes you can even get the one with the pop up timer!
  5. While it’s cooking, baste with the drippings occasionally to keep it moist!
  6. Carve & enjoy!

Insta Pot Curry Recipe!

This is one of my fall go to recipes that I am obsessed with! We’ve been making this insta pot curry recipe since last fall but really have the recipe perfectly nailed down. This is the easiest dinner recipe that tastes like you’ve been working all day on it!

I really fell in love with my insta pot during the pandemic because it cooks food so easily and quickly! This recipe wouldn’t be as easy if it weren’t for my insta pot so definitely think about investing in one if you don’t already have it!

Ingredients:

4-5 boneless skinless chicken thighs

1 yellow onion diced (keep pieces large)

olive oil

1 tablespoon minced garlic

1 tablespoon minced ginger

7-8 chopped baby carrots

1 tablespoon ketchup

3-4 potatoes peeled and cubed

2-3 cups chicken broth

block of Japanese curry roux

1 tablespoon soy sauce

White rice to serve it with!

Directions:

  1. In your insta pot turn on sauté feature and add olive oil, onions, garlic, and ginger. Cook until fragrant.
  2. Add in the chicken thighs and cook both sides until white. (I do this to make sure it get’s cooked all the way through)
  3. Add in potatoes, carrots, and pour chicken broth over everything until covered.
  4. Place curry roux on top but don’t mix it in just leave it there. Close the lid and then turn on stew setting for 15 minutes.
  5. After cooked, let steam for additional 15 minutes.
  6. Lift the lid and mix thoroulghy adding in ketchup & soy sauce.
  7. Enjoy!!

As you can see, this was the insta pot curry recipe easiest recipe to make! I love to serve this with white rice and will have leftovers for days! This is also a really easy meal prep meal for lunches for the week too!

I get the mild curry so this is definitely a family favorite and really has all the veggies and nutrients you need for a dinner! If you liked this recipe, check out more here on my blog or on my Pinterest for video content!
